Aubergines, tomatoes, squash, peppers, onions, olive oil
or lard
The quantities are chosen according to taste Heat the oil
and saut the not-too-finely chopped onions and peppers in squares.
When they are almost done, add the squash and aubergine, cut
into squares. When everything is done, add the tomatoes, peeled
and chopped. It is left to cook until it is fried after which
salt is added.
